14 BEAN SOUP

Mix 14 kinds of beans, Wash 1 lb of beans, cover with water in a LARGE kettle. Add 3 tbsp salt. Soak overnight. In the morning, drain.

Add 2 quarts of water
1 clove of garlic ( more is better)
1 ½ lbs smoked pork hocks
3 stalks of celery, chopped
16 oz can of tomatoes
1 large onion, chopped
2 carrots, chopped
1 tbsp lemon juice
1 tsp chili powder
salt and pepper to taste

Combine all, simmer slowly for 3 hours. Remove pork hocks, discard skin, fat, bones and return meat to soup.
