ANGEL FOOD CAKE

WHITES OF 13 EGGS, or enough to make 3 cups
Add A PINCH OF SALT
Beat with wire whisk until it starts to get foamy. , then sprinkle with 1 teaspoon
CREAM OF TARTAR.
Beat whites until stiff but not dry.
Fold in : 1 cup CAKE FLOUR
1 ½ cups SUGAR
sifted together seven times, back and forth from one piece of waxed paper to another.
Last, add 1 teaspoon VANILLA and
½ teaspoon ALMOND EXTRACT.
Bake in ungreased tube pan in slow oven, 275°. It must become a delicate brown in 1 hour. Do not open oven first 50 minutes.

This is mother's recipe, with her directions. Yes, she did sift back and forth seven times. I was allowed to get the two pieces of waxed paper ready.
