Caregiver's Fast Salad

Romaine hearts

Any of:

celery
Garlic
Onion
Green Pepper
Orange pepper for rich caregivers
Frozen exercise beans, thawed, or
Canned Garbanzo or other beans
Bean sprouts
Radishes
Water chestnuts
Cabbage
Carrots
Sunflower seeds

Vary the choices from day to day. Boredom is the enemy of sensible eating. Slice the Romaine from the tip. Slice celery right across the whole stalk in narrow pieces. Peel carrot and keep on with the peeler to take off strips to eat, or slice and dice. For peppers, instead of bothering to core the pepper, cut slices off the sides without cutting into the white or the seeds, and dice them. For cabbage, cut off a chunk and cut it fine. The core of cabbage makes a good dipping vegetable but is a little sturdy to come upon in the midst of a salad.
For dressing, I use just olive oil, salt, pepper and a little sugar. Vinegar and mayonnaise happen to be on my bad list. My favorite salad dressing is from the Virginia Honey Company, Vedalia Onion and honey, but that's out for now. In better days I bought it by the case, and used it for Christmas gifts year after year. Some of the herb mixes are good but you have to read the labels carefully to see if that list includes something you're trying to avoid for allergies.
