CLEMENTINE SALAD

Peel and cut up clementines - remove the seeds that allegedly do not exist.
Cut thin slices of endive hearts to make chopped lettuce.
Add a pleasant amount of chopped pecans.
Use a light dressing that lets the colors of the nuts and oranges show. I use Vedalia onion and honey dressing from the Virginia Honey Company
