Crisp Oatmeal Cookies

Cream together:

1 cup shortening
1 cup white sugar
1 cup brown sugar
Sift together: 2 cups flour
1 tsp baking soda
1 tsp salt

Add:

2 eggs
1 tsp vanilla
3 cups rolled oats

Combine all thoroughly. Bake 12 minutes at 375 °. You might try 350° first, to see what your pans and your oven need.

With regular oats this makes a rugged lunch box cookie, suitable for mailing to a Marine grandson. With fine-ground quick-cooking oats it makes a dainty tea cookie. It may be rolled, chilled and sliced, or rolled on pastry cloth and cut into squares and diamonds, without chilling, or dipped and flattened with a spoon. Walnuts add to the flavor. It is not suitable for cookie cutters.
