Fluffy White Icing
Plan ahead. The cake must be completely cool. Frosting slides right off of a warm cake.

Prepare 2 stiffly beaten egg whites. I use the regular large bowl on the KitchenAid.

Boil together ¾ cup sugar
To 242° ¼ cup water
Long thread 1 teaspoon of corn syrup

Either use a candy thermometer or keep dipping a spoonful of syrup and letting it drip back into the pan and suddenly there will be an unmistakable long thread that stiffens in the air. At this point, one hopes that the egg white bowl is not too far away. Turn the mixer on very low speed, and pour the syrup over the egg whites. Then beat the mixture until you like the consistency for spreading.

Lazy Frosting
Buy ready-mixed frosting. Add sour cream.
