Lemon Caraway Cookies

1 egg
1 cup sugar
½ cup butter - use real butter
2 Tblsp lemon juice
2 ½ cup cake flour ( or regular flour with 2 level tablespoons full removed for each cup, i.e. 5 tablespoons full. )
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon caraway seed

Form into rolls of the size you want cookies to be, wrap in wax paper , chill, slice thin with very sharp knife. These rise very little so you can place them closer together than drop cookies.

Bake at 400° until edges are golden. Start checking at 8 minutes.
