Red Chocolate Cake

Cream together

½ cup of shortening
1 ½ cups sugar
Add 2 eggs and beat
Put 2 teaspoons of soda in a 4 cup glass measure, so you can see what goes on. Pour in 2 cups of boiling water. Wait for the fizz to calm down and make sure that you have 2 cups of liquid.

Sift together

2 cups bread or regular flour
½ cup cocoa

Add the dry mix alternately with ½ cup of sweet milk.
Add 1 teaspoon of vanilla.
Bake at 350° for 35 or 40 minutes. I usually double this and bake it in a big flat pan, but it's intended for 2 nine inch layers. I have made it with sweet milk, sour milk, skim milk, and it's good no matter what.

Fluffy White Icing
Plan ahead - the cake must be completely cool for this frosting. It will slide right off a warm cake.

Have ready 2 stiffly beaten egg whites.

Boil together ¾ cup of sugar
To 242° ¼ cup water
Long thread 1 teaspoon of corn syrup

Pour the syrup mix over the egg whites. Add a dash of vanilla. Beat until thick.
