SCHEDULE CAKE

Cream together

½ cup soft butter or oleo
1 cup white sugar


Beat in, one at a time, 2 eggs


Add

1 cup sour milk
2 tsp vanilla

Sift together

2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt

Add the dries to the batter, stirring just enough to mix thoroughly. Don't beat. Beating toughens cake.

 

Mix together:

½ cup brown sugar
1/3 cup chopped pecans
1 teaspoon cinnamon

Pour half the batter into a greased and maybe floured 9 inch square pan. Sprinkle the pecan mix over the batter. Pour on the remaining batter.
Bake 50 minutes at 325 degrees. Cake is done when a clean, cold knife stuck into the deepest part comes out clean.
Good warm or cold. No frosting needed. Successful when doubled, to serve at meetings. It's rich but not crumbly to serve.

You really can make sour milk from sweet milk by adding to each cup of milk:

1 tablespoon of vinegar OR
1 tablespoon of lemon juice OR
1 ¾ teaspoons of cream of tartar
